You have probably heard that you should be eating more Lutein, but don’t really know why. Let me give you a quick explanation as to why it is important to your health. Lutein is a powerful carotenoid vitamin that is not only good for promoting eye health but is also good for your brain, heart, and skin. When you are deficient in lutein it can lead to an acceleration of cataracts as well as macular degeneration.
So, it is important to consume plenty of this nutrient.
Another beneficial nutrient for eye health is ginger. The reason ginger is important is that it contains a compound called acetylcysteine which helps support healthy eyes.
Today we want to share a recipe with you that contains both these foods so that you can provide nutrients to your eyes and keep them healthy for many years to come.
Enjoy this recipe…
Ginger Kale Salad
2-3 cups Kale and chopped into 2-inch pieces
2 Tbsp. sesame seeds
1 Tbsp. ginger, minced
2 Tbsp. toasted sesame oil
2 Tbsp. apple cider vinegar
1/8 tsp coarse ground pepper
1/8 tsp sea salt
In a large bowl, place the kale and then in another small bowl mix together the ginger, sesame oil, apple cider vinegar, salt, and pepper. Whisk together well and then drizzle over kale. Top with sesame seeds and enjoy!
Now while we promote trying to get our nutrients from real food such as ginger, kale, spinach, and other foods it can be tough to consistently eat the correct amount of nutrients. So, we also came up with an alternative to ensure that you can easily obtain the necessary nutrients for proper eye health.
We had our naturopathic doctor who specializes your eyes create a formula that not only contains the acetylcysteine from ginger and the lutein from kale, but other key nutrients that promote healthy eyes.
