Another beneficial nutrient for eye health is ginger.  The reason ginger is important is that it contains a compound called acetylcysteine which helps support healthy eyes.

Ginger Kale Salad

2-3 cups Kale and chopped into 2-inch pieces
2 Tbsp. sesame seeds
1 Tbsp. ginger, minced
2 Tbsp. toasted sesame oil
2 Tbsp. apple cider vinegar
1/8 tsp coarse ground pepper
1/8 tsp sea salt

Directions: 

In a large bowl, place the kale and then in another small bowl mix together the ginger, sesame oil, apple cider vinegar, salt, and pepper. Whisk together well and then drizzle over kale. Top with sesame seeds and enjoy!
