Bilberry Muffin Recipe

Bilberries are a key food that provides the necessary nutrients to support eye health. Bilberries are rich in natural antioxidants known as anthocyanosides. 

These antioxidants are designed to repair damaged cells. They produce a pigment called rhodopsin, which improves your vision at night and helps your eyes adapt to light changes. 

Bilberries are similar in nutrient content to blueberries also. We suggest trying to get in more of both these fruits when you can to improve the health of your eyes.

Here is a delicious muffin recipe using bilberries or blueberries for you to enjoy while you consume the health benefits of these pigments. 

1 cup of Milk
¼ cup Coconut Oil
1 tsp Vanilla
1 large Egg
2 cups Flour
½ cup Sugar
3 tsp of Baking Powder
1 tsp Salt
1 cup fresh Bilberries or Blueberries

Preheat your oven to 325 degrees F. Then line muffin tins with muffin wraps.  Beat together your milk, oil, vanilla, and egg until well mixed. 

The stir in the flour, sugar, baking powder and salt until the dry ingredients are moist and lumpy.

Put your berries in a bowl and a trick to keep them from sinking to the bottom of your bowl and muffin tins while baking is to then coat the berries with about a tsp of flour. Mix them up so that the flour coats eat berry then fold them into the batter. 

Put an equal amount of batter in 12 muffin cups and bake for about 25 minutes.  Let cool and then enjoy!
